VEGAN CHOCOLATE CHIP ALMOND FLOUR BLONDIES


These VEGAN CHOCOLATE CHIP ALMOND FLOUR BLONDIES are the perfect treat... soft, gooey, chocolate-y, delicious!



You’re going to want to make these right now!.

These scrumptious blondies are made with almond flour, some peanut butter (don’t worry, they won’t taste like peanuts), and sweetened with maple syrup. So they are refined sugar free, gluten free and wheat free.



Another ingredient in this recipe is aquafaba. You know, that liquid inside a can of chickpeas. It does wonders for baked goods as a substitute for eggs. Now you know to never throw it out!


Then, we add chocolate chips for an even sweeter treat!

VEGAN CHOCOLATE CHIP ALMOND FLOUR BLONDIES


WHAT YOU'LL NEED:

  • 3 Tbsp aquafaba

  • ¾ Cup peanut butter

  • ⅓ Cup coconut oil, melted

  • ⅔ Cup maple syrup

  • 1 tsp vanilla extract

  • 2 Cups almond flour

  • 1 tsp baking powder

  • ½ Cup chocolate chips


HOW TO MAKE IT:

  1. Preheat oven to 350°F and line a square 8x8" baking tray with parchment paper.

  2. Pour the aquafaba in a small bowl, and use an electric mixer to whisk to a smooth foam, about 4-5 minutes.

  3. To a large bowl, add the coconut oil, maple syrup, vanilla extract and peanut butter, and use the electric mixer to blend until smooth. Add in the whipped aquafaba and stir until fully combined.

  4. Add in the almond flour and baking powder, and stir to incorporate. Add the chocolate chips, saving a few to sprinkle over the top.

  5. Pour the batter into the lined tray and sprinkle over the remaining chocolate chips.

  6. Bake for 25 to 30 minutes, or until the edges start to turn golden. Don’t worry if it’s still soft in the middle, it will firm up as it cools.

  7. Allow to cool before slicing.

  8. Enjoy!
