Spice up your holidays with this delicious Cinnamon Cake!
This cake will make you star baker anywhere you go! It's so easy to make, and has a beautiful texture. You're going to want to make two, because you won't stop eating it!
You had me at 'coquito glaze'!
CINNAMON BUNDT CAKE WITH COQUITO SUGAR GLAZE
WHAT YOU'LL NEED:
For the Cinnamon Cake:
2 Cups flour (I used Bob’s Red Mill 1 to 1 Baking Flour)
1 Cup raw cane sugar
2 to 3 Tbsp ground cinnamon
1/2 Tbsp ground nutmeg
2 tsp baking soda
1/4 tsp salt
1 Cup vegan mayonnaise
1 Cup water
1 tsp vanilla extract
For the Coquito Glaze:
1/4 cup of Easy Vegan Coquito (see recipe in other post)
1 cup powdered sugar
1/4 tsp cinnamon powder
splash of vanilla
HOW TO MAKE IT:
Preheat oven to 350 degrees
Grease a bundt cake pan
In a mixing bowl, whisk together the flour, baking soda, sugar, cinnamon, nutmeg and salt
In another bowl, whisk together vegan mayonnaise, water and vanilla extract until it looks like milk.
Pour the liquid mixture into the dry ingredients and mix well with a spoon
Pour batter into greased bundt cake pan
Bake for 40 to 45 minutes, or until toothpick inserted in cake comes out clean.
When done, remove cake from oven and let rest for 10 minutes in the bundt pan. After 10 minutes, transfer out of pan onto wire cooling rack and let cool completely, about an hour
Prepare the Coquito Glaze by whisking together all the ingredients until well incorporated, and a thick pourable glaze forms.
Once your cake is completely cooled, drizzle over top of cake and enjoy!
