CHOCOLATE PROTEIN WAFFLE NICE CREAM SANDWICHES

Don’t be fooled! These are healthy!! Treat yourself to these CHOCOLATE PROTEIN WAFFLE NICE CREAM SANDWICHES and get ready for some sin-free indulgence.



Just a few simple ingredients come together to make these fabulously delicious waffle sandwiches that will make you feel like a kid again!

You can make the Nice Cream ahead of time to save a few steps, and to make sure it is frozen enough. Making nice cream is so easy, and it takes as little or as many ingredients as you want. You could do just frozen bananas, or you can add some peanut butter, cinnamon, cacao powder… the possibilities are endless!


Just add to a high speed blender or food processor and blend together until smooth. Then place back in the freezer to solidify. That’s it! It’s perfect to enjoy on its own, or in these waffle sandwiches.



The waffles are just as easy to make, and require a few ingredients. You can use chocolate protein powder, or sub with cacao powder if you’d like. The result is a chocolate-y, crispy waffle that you are going to love!


I used chickpea flour to add more protein to the waffles, but you could use regular flour if you prefer.



Once your waffles are ready, just make some sandwiches with the nice cream and get ready for an amazing breakfast or snack!

CHOCOLATE PROTEIN WAFFLE NICE CREAM SANDWICHES


WHAT YOU'LL NEED:


For the Nice Cream:

  • 3 to 4 ripe bananas, chopped and frozen for at least 6 hours

  • 1 Tbsp peanut butter (optional)

  • 1 pinch of cinnamon (optional)

For the Waffles:

  • 1/2 Cup chickpea flour

  • 50g vegan protein powder (about 1/2 Cup)

  • 2 tsp baking powder

  • 2 Tbsp ground flaxseeds

  • 1 Cup water

  • 1 tsp vanilla extract

  • dash cinnamon


HOW TO MAKE IT:


  1. Make the nice cream ahead of time by chopping the ripe bananas and freezing them overnight.

  2. Once frozen solid, add to a high speed blender or food processor and process until smooth. Add peanut butter or any other flavoring and process until well incorporated.

  3. Return nice cream to the freezer to harden.

  4. Get started on the waffles by mixing all ingredients in a small bowl.

  5. Let mixture rest while you preheat your waffle iron.

  6. Once hot, spray the waffle iron with come non-stick oil spray.

  7. Add the waffle batter using about 1/4 cup of the batter for each waffle. This should yield about 6 waffles.

  8. Cook until crispy and the edges are a little darker and remove carefully.

  9. Assemble the waffle sandwiches by adding a dollop of nice cream in between two waffles.

  10. Enjoy!
